Ultimate Tomato Sauce

This is a basic sauce that can be used for pasta, meats and even fish.

Preparation time: 10 minutes
Cooking time: 20 minutes

  • 1 x 400gm tin of Italian peeled tomatoes
  • 1 small onion
  • 1 clove of garlic
  • Fresh oregano
  • 1 sprig of Thyme
  • 3 tablespoons Olive Oil
  • 2 tablespoon Soy sauce
  • Half lemon

Firstly chop the whole onion finely.

Add the onion to a saucepan together with the olive oil on medium heat.

Stew the onion until soft.

Add grated garlic and continue stewing  for a few minutes. (Do not caramelise)

Roughly chop some fresh oregano and add to onions.

Add a sprig of Thyme.

Continue cooking and just before onions caramelise...

Add the tinned tomatoes.

Roughly chop with knife.  Pieces of tomato only enhance the dish.
Do not do this in Teflon pots.

Add a whole bay leaf.

Add the Soy sauce. Cook for 15 minutes

Add black pepper, no salt. Add squeeze of lemon and continue cooking for 5 minutes.  

Remove bay leaf and thyme sprig.  Pour sauce into container and use immediately or cover and refrigerate once cooled.  A great sauce to add to pasta and other dishes.
